FN 287 CHOCOLATE CONFECTIONERY


1 Unit 0.5 hour lecture 1.5 hours lab
Prerequisite: FN 171  or FN 210  or current ServSafe Certification
Study the history of chocolate, its cultivation, and present-day manufacturing. Topics include the fundamentals of chocolate science and tempering, and practice in producing a wide range of chocolate candies. Truffles, hand-dipped candies, molded bonbons, and chocolate décor will be covered.
