AEFN 790NC BAKING BASICS 0 Unit 1 hour lecture 3 hours lab Prerequisite: FN 210NC or current ServSafe Certification Introduction to fundamental principles of baking basics. Students will learn how to prepare simple quick breads, yeast dough (both lean and enriched), cookies, cupcakes, pastry fillings, tarts, pies and pie fillings.
